Chicken Fried Rice

ingredients

  • 4 cups cooked long-grain rice
  • 2 large eggs, whisked
  • 2 tablespoons plus 2 teaspoons extra light olive oil, divided
  • 1 pound skinless and boneless chicken breast tenderloins, cut into 1/2" pieces
  • 1 tablespoon finely chopped peeled fresh ginger
  • 1 clove garlic, minced
  • 8 ounces fresh mushrooms, sliced
  • 2 medium carrots, chopped
  • 1 small zucchini, quartered and sliced thin
  • 1 cup chopped onion
  • 1 cup frozen green peas, thawed
  • 1/2 cup Planters dry roasted peanuts, unsalted
  • 3 tablespoons San-J Tamari wheat free soy sauce
  • 2 tablespoons Holland House sherry cooking wine
  • 6 medium sliced green onions, including green tops
  • 3/4 pound fresh snow pea pods
