Crock pot Chicken Stew

A good make ahead meal. Great served over rice.

ingredients

  • 6 - 8 chicken breasts
  • 6 potatoes, pealed and sliced
  • 1 1/2 c peeled and cubed carrots
  • 6 banana peppers (or 1 bell pepper)
  • 1 15 oz can stewed tomatoes
  • 1 large onion
  • 2 cloves garlic, minced
  • 2 can chicken broth
  • salt and pepper to taste

directions

  • 1

    Place seasoned chicken breasts in bottom of crock pot.

  • 2

    Layer potato slices, peppers, onions, carrots, and garlic on top.

  • 3

    Spread stewed tomatoes on top including the juice in the can too.

  • 4

    Pour chicken broth around the edges and season with salt and pepper.

  • 5

    Cook on low setting for 8 hours.
