Crock pot Chicken Stew
A good make ahead meal. Great served over rice.
ingredients
- 6 - 8 chicken breasts
- 6 potatoes, pealed and sliced
- 1 1/2 c peeled and cubed carrots
- 6 banana peppers (or 1 bell pepper)
- 1 15 oz can stewed tomatoes
- 1 large onion
- 2 cloves garlic, minced
- 2 can chicken broth
- salt and pepper to taste

Place seasoned chicken breasts in bottom of crock pot.

Layer potato slices, peppers, onions, carrots, and garlic on top.

Spread stewed tomatoes on top including the juice in the can too.

Pour chicken broth around the edges and season with salt and pepper.

Cook on low setting for 8 hours.
