- 2 tablespoons extra light olive oil, divided
- 1/4 teaspoon McCormick crushed red pepper
- 4 medium carrots, chopped
- 1 medium onion, sliced vertically
- 1 large red bell pepper, chopped
- 1 tablespoon finely chopped peeled fresh ginger
- 1/2 cup Planters dry roasted peanuts, unsalted
- 3 cups cooked rice, for serving
- 1 tablespoon sugar
- 3 tablespoons water
- 3 tablespoons San-J Tamari wheat free soy sauce
- 2 tablespoons Holland House sherry cooking wine
- 1 tablespoon Nakano rice vinegar
- 1 teaspoon cornstarch
