ingredients

chicken:
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 tablespoon cornstarch (such as Argo)
  • 1 tablespoon San-J Tamari wheat free soy sauce
remaining ingredients:
  • 2 tablespoons extra light olive oil, divided
  • 1/4 teaspoon McCormick crushed red pepper
  • 4 medium carrots, chopped
  • 1 medium onion, sliced vertically
  • 1 large red bell pepper, chopped
  • 1 tablespoon finely chopped peeled fresh ginger
  • 1/2 cup Planters dry roasted peanuts, unsalted
  • 3 cups cooked rice, for serving
sherry mixture:
  • 1 tablespoon sugar
  • 3 tablespoons water
  • 3 tablespoons San-J Tamari wheat free soy sauce
  • 2 tablespoons Holland House sherry cooking wine
  • 1 tablespoon Nakano rice vinegar
  • 1 teaspoon cornstarch
