Orange-Dijon Chicken
ingredients
- 1 pound skinless and boneless chicken breasts
- 1 1/2 tablespoons extra light olive oil
- 1 tablespoon butter
- salt and freshly ground black pepper
- 4 tablespoons orange marmalade or apricot jam (such as Smucker’s)
- 2 tablespoons Maille Dijon style mustard
- hot cooked rice, for accompaniment
