Easter Rice Cake

  • 4 cups rice
  • milk
  • 10-12 eggs
  • 1 lrg container ricotta cheese (3 lbs)
  • Cinnamon
  • 1 tbsp saslt
  • 1 tbsp vanilla
  • 2 cup sugar
  • Juice and rind of 2 lemons

*Boil rice for 10 minutes. Drain; Add enough milk to almost cover rice. Continue to cook for 5-10 minutes. When almost cooked, add vanilla, sugar and lemon. Add cinnamon. When cool, add ricotta and beaten egg. Pour into greased glass dish. Bake 350F until top is brown. Brush with melted butter half way though baking.
