Roasted Red Potatoes
Quick and easy.
ingredients
- 1 lb baby red potatoes, scrubbed
- 1 tablespoon dry Thyme
- 2 cloves of garlic, smashed
- Extra virgin olive oil
- Salt
- Pepper

Preheat oven to 400°.

Halve scrubbed potatoes and boil in salted water for 5 minutes just to soften them a little.

In a large bowl, toss potatoes with about a tablespoon of extra virgin olive oil and dry thyme. Add salt and pepper to taste.

Place potatoes on top of smashed garlic on a piece of foil. Fold foil up to a make a loose packet.

Bake in oven for 20 minutes.
