Tuna Cakes
ingredients
- 1 cup canned tuna or salmon (pouch or canned ok)
- 1 egg white
- 1 teaspoon Dijon mustard
- 2 tablespoons whole wheat bread crumbs
- 1 tablespoon whole wheat flour
- 2 teaspoon lemon juice
- 1 scallion or 2 tablespoons finely chopped onion
- Salt, pepper, or Old Bay seasoning to taste
- 1 tablespoon reduced-fat mayonnaise (optional)

1. In a bowl, combine all ingredients. Season to taste.

2. Heat a skillet over medium-high heat. Shape mixture into two patties. Coat skillet lightly with cooking spray. Cook patties, turning once, 3 minutes per side or until golden brown and cooked through. Stir mayonnaise, remaining lemon juice, and scallions together.
