Oatmeal Protein Pancakes
High protein and delicious.
ingredients
- 1/2 cup old-fashioned oatmeal
- 1/4 cup fat free cottage cheese
- 4 egg whites
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- Pinch of Splenda (optional)
- Top with Sugar Free syrup (optional)

Mix all ingredients except syrup in the blender.

Spray a nonstick skillet with cooking spray. Add the batter and cook over medium heat until both sides are lightly browned. You will get one big pancake.

Optional: Top with 1/4 cup blueberries while its cooking (unless you want a blue pancake).
