Foolproof Quiche

Surprisingly easy and delicious, this recipe was adapted from one I cut out of a magazine when I was about sixteen years old. It was good then and it’s still a favorite now.

  • Preheat oven to 400°.

  • Lay the crust in the pie plate, a deep one if you have it, and trim the edges (or use a defrosted, pre-made crust and skip this step).

  • In a large mixing bowl, beat the eggs to break the yolks. Add the half and half and salt and beat until combined.

  • In the bottom of your pie crust, layer the spinach and ham evenly, then cover with the cheddar cheese. Pour the egg mixture over the cheese.

  • Carefully transfer the quiche to the oven and bake at 350° for 50-60 minutes. Place a sheet of aluminum foil or and empty baking sheet on the rack below the quiche as it bakes to keep any egg mixture from dripping onto the bottom of your oven. When done, the top of the quiche should be browned and the egg should pull away from the crust slightly.

  • Let cool 10-15 minutes before enjoying, or cool completely and refrigerate until needed. This quiche stores and reheats very well.

Get creative and play around with your favorite fillings. Just keep the total amount to about 1 cup to avoid an overflowing pan. Try broccoli and cheese, sausage and pepper, tomato and bacon - it's all delicious!
