Mom's Banana Bread
My mom’s classic recipe for the most delicious banana bread ever.
1¾ cup all-purpose flour
1¼ teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon salt
6 tablespoons butter, softened
⅔ cup sugar
2 eggs
3 ripe bananas, mashed
Preheat oven to 350°.
In a small bowl, combine the flour, baking powder, baking soda, and salt.
In a stand mixer, or a large mixing bowl, with a hand beater, cream the butter and sugar until light and fluffy. Add the eggs one at a time.
Add half of the flour mixture and beat until combined. Add the bananas and beat another 30 seconds. Add the remaining flour mixture and beat until the flour is completely incorporated.
Pour the batter into a greased loaf pan and bake at 350° for 50-60 minutes.
Remove the bread from the oven and wait 10 minutes before removing the loaf from the pan. Cool another 15 minutes before slicing.
