Mediterrenean Brown Rice
ingredients
- 1 c. brown rice mix (brown, red, black, etc.)
- 3 c. water
- 1 tsp. salt
- 2-3 Tbsp. olive oil
- 2 large fresh tomatoes, diced
- 1/4 c. diced red onion
- 3-4 oz. feta cheese
- 1/4 c. toasted pine nuts or chopped toasted pecans (optional)
directions
In a medium saucepan on medium high heat, combine rice, water, and salt. Bring to a boil, and allow to boil softly until rice has absorbed water, about 30 minutes. Meanwhile, combine oil, tomatoes, and onion in a bowl to marinate. Remove rice from heat and allow to cool for 5 minutes. Add oil and vegetable mixture. Crumble or chop feta and fold in. Fold in nuts (optional). Serve immediately, as a side dish or as a vegetarian meal.
notes
The richer the olive oil the better, as this provides much of the flavor.
