My mother’s German-esque sweet and tangy Potato Salad

ingredients

  • 4 lg. Baking Potatoes, boiled, peeled and chopped
  • 1 Small red onion, chopped
  • 8 hard boiled eggs, chopped
  • 4-6 Sweet Pickles, chopped
  • Salt & Pepper to Taste
  • Dressing
  • 1/2 cup sugar
  • 1/4 cup vinegar
  • 1 Tbsp. butter
  • 1/4 tsp. Coleman’s Dry Mustard
  • 1/2 cup mayonnaise

directions

Mix potatoes, onion, sweet pickles, eggs, salt & pepper together lightly. Boil the sugar, vinegar, butter and mustard for two minutes. Remove from stove and whisk in mayonnaise. Pour over potato mixture. Serve warm or chilled.

Original recipe from Letha Wilson Shanks. I sometimes add roasted, chopped pecans after it's chilled. -- Debbie
