Mother's Potato Salad
My mother’s German-esque sweet and tangy Potato Salad
ingredients
- 4 lg. Baking Potatoes, boiled, peeled and chopped
- 1 Small red onion, chopped
- 8 hard boiled eggs, chopped
- 4-6 Sweet Pickles, chopped
- Salt & Pepper to Taste
- Dressing
- 1/2 cup sugar
- 1/4 cup vinegar
- 1 Tbsp. butter
- 1/4 tsp. Coleman’s Dry Mustard
- 1/2 cup mayonnaise
directions
Mix potatoes, onion, sweet pickles, eggs, salt & pepper together lightly. Boil the sugar, vinegar, butter and mustard for two minutes. Remove from stove and whisk in mayonnaise. Pour over potato mixture. Serve warm or chilled.
