Snapper
I used to make this dish at Le Chantilly. This is a great dish since the flavors go together so well and it is very healthy.
ingredients
- 4 6 oz fillets of red snapper
- 1/4 cup sherry wine vinegar
- 2 cloves garlic diced
- 4 small tomatoes
- 2 tablespoons chopped basil or pesto
- 1 yellow squash chopped
- 1 green squash chopped
- 1 clove garlic diced
- 1 bunch spinach

Sweat the garlic in olive oil to release the aroma. Add sherry and reduce to a syrup. Add the tomatoes

and basil and season with salt and pepper. Cook for a few seconds.

Sauté the squash in olive oil. Season with salt and pepper.

Sweat the garlic and then add the spinach. Raise the heat and add the pepper. When fully wilted, with salt.

Season the snapper with salt and pepper. Sauté at high heat. Remove when done.
