Snapper

I used to make this dish at Le Chantilly. This is a great dish since the flavors go together so well and it is very healthy.

  • Sweat the garlic in olive oil to release the aroma. Add sherry and reduce to a syrup. Add the tomatoes

  • and basil and season with salt and pepper. Cook for a few seconds.

  • Sauté the squash in olive oil. Season with salt and pepper.

  • Sweat the garlic and then add the spinach. Raise the heat and add the pepper. When fully wilted, with salt.

  • Season the snapper with salt and pepper. Sauté at high heat. Remove when done.
