Grilled Salmon with Cucumber Salad
This is a great summer dish. We used to make this at 44 at the Royalton Hotel.
4 6-7 ounce Salmons with Skin on
2 Cucumbers
Walnuts
8 Dates
Olive oil
Chives (optional)
Grill the salmon until cooked to your preference. A 7 ounce fillet should only take 7 minutes to be medium rare.
For the cucumber salad, peel, halve and de-seed the cucumber. Sprinkle some salt on them and let them set for a few minutes. In the meantime, chop the dates and walnuts (not too small). Crush the cucumber with your hand, and then slice it. Mix all the ingredients together. Serve in the middle of the plate and place the salmon on top of the salad
