Spinach Salad

  • ¼ cup lemon juice (fresh squeezed)

  • ⅔ cup Very good Extra Virgn Olive oil

  • Baby Spinach

  • Toasted Pignoli nuts

  • Shaved parmigiano reggiano ( Peeler works good for this)

  • Mix the lemon and olive oil. You can add more lemon or olive oil based on your taste. Add salt and pepper to taste. Mix with the spinach. Put on plate and add the shaved parmigiano and nuts.
