Cassoulet
A great winter recipe and timeless classic.
ingredients
- 4-6 slices bacon
- 2 1/2 lb. cut up chicken
- 4-6 sausages
- 1 clove minced garlic
- 1/2 cup chopped parsley
- 1 1/2 cups chopped onion
- 1 pint tomato sauce
- 1 cup white wine
- 1 tsp salt
- 1/2 tsp cracked pepper
- 1 bay leaf
- 45-60 oz. can white beans

Cook bacon- remove and chop.

Brown sausages and chicken bacon fat, 10 min. each side.

Transfer to baking pan and bake 375°F for 15 minutes.

To drippings in pan, add onion, garlic and parsley. Cook medium low for 5-7 min.

Add tomato sauce, wine, salt, pepper and bay leaf.

Sprinkle with bacon.

Bake 375°F for 45 minutes.
notes
I like to use different sausages and replace chicken with pheasant when one chooses to visit the farm.
