Deep Chocolate Cake W/Chocolate-Peanut Butter Frosting
From Vegetarian Times. So rich and delicious, no one can believe it’s egg and dairy free.
Per serving: 440 CAL; 6 G PROT; 22 G TOTAL FAT (4 SAT.FAT); 59 G CARB; 0 MG CHOL; 250 MG SOD; 3 G FIBER
To Make Cake:
1. Preheat oven to 375F. Generously oil 8" square or round baking pan. Dust with sifted cocoa or line botton with parchment paper.
2. Sift flour, cocoa, soda, salt and sugar. In another bowl, combine oil, water or coffee and vanilla. Pour liquid ingred. into dry ingred. and mix until smooth.
3. Add vinegar and stir briefly. Baking soda will begin to react with vinegar, leaving pale swirls in batter. Without wasting time, pour batter into prepared pan.
4. Bake for 25 to 30 minutes. When cool, transfer to plate and spread frosting.
To Make Frosting:
1. In heavy saucepan, melt chocolate over medium heat.
2. Beat together peanut butter, water and vanilla until smooth.
3. Beat in confectioners sugar and add melted chocolate, mixing until blended.
