Loaded Potato Soup
4 large potaoes cooked and cubed
½ C chicken Broth
¼-½ cup cream
½- 1 cup of milk
2 stalks of celert chopped
Boil potaoes with or without skin (I prefer skin on). As potatoes are cooling, place chopped onions, celery and carrots in pan. Saute in 3 tbs butter. Cook until onions are transparent. Add flour and mix till combined. Add milk and cream to thicken. then add chicken broth. Then the rest of the ingredients and cook for 35 - 45 min. If the consistency is too thick add more chicken broth or water.. This is a wonderful hearty soup in the winter..
