Blondies with Chocolate Chips
A rich and chewy cookie bar.
ingredients
- 1/2 cup butter (1 stick)
- 1/2 pound (1 cup firmly packed) light brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 cup flour
- 1 large egg
- 1/2 cup semisweet chocolate chips
- 1/2 cup chopped pecans

Preheat the oven to 350° F. Spray an 8“ x 8” pan with nonstick spray.

Melt the butter in a microwave-safe mixing bowl. Add the brown sugar. Stir well. Add the baking powder, salt and vanilla extract, stirring util completely incorporated. Stir in the flour, again stirring until it is well mixed. The batter will be very stiff.

Crack the egg into a small bowl, and beat well with a fork or whisk. Add the egg to the batter and stir with a spoon until completely incorporated. Stir in the chocolate chips and the nuts.

Spread the batter in the greased pan. The batter will be stiff and sticky. You may have to spread it to the edges of the pan with the back of a spoon, but don’t worry about getting it exactly even, as the batter will spread as it bakes.

Bake until the top begins to get golden brown is set, about 20 to 25 minutes. Do not overbake. Cool for at least 20 minutes. Cut into small squares. Store in an airtight container or cover well with plastic wrap. These bars freeze very well and improve in flavor after the first day.

If desired, double the ingredients and bake in a 9" x 13" pan.
