Old Fashioned Shortbread Cookies
This recipe with variations on a theme, came from the back of an ARGO Cornstarch box. I’ve used it forever: They are easy and yummy! These cookies can be made by hand or in the food processor.
ingredients
- 1 cup unsifted flour
- 1/2 cup Corn Starch
- 1/2 cup confectioners sugar
- 3/4 cup margarine
- 1 tsp. vanilla
directions
Stir together the first 3 ingredients. In a large bowl with mixer at medium speed, beat margarine until smooth. Add flour mixture and vanilla. Beat until combined. Refrigerate 1 hour. Shape into 1“ balls. Place about 1 1/2 ” apart on ungreased cookie sheet; flatten with lightly floured fork. Bake in 375°F. oven for 10 to 12 minutes, or until edges are lightly browned.
Variations to the above recipe:

Melting Moments with Nuts - Roll dough into log. Roll log into finally chopped nuts. Bake.

Pecan Cinnamon - Add 1/2 cup finely chopped pecans and 1 tsp. cinnamon into flour mixture. Bake.

Amandine - Add 1 cup finely chopped almonds to flour mixture. Bake.

Anise - Add 2 tsp. ground anise seeds to flour mixture, or anise extract with vanilla. Bake.

Chocolate - Add 1/4 cup cocoa and 1/4 tsp. salt into flour mixture. Bake.

Coconut - Add 1 cup finely chopped flaked coconut in flour mixture. Bake.

Orange-Clove - Add 1 Tbsp. grated orange zest and 1/2 tsp ground cloves to flour mixture. Bake.
