Liptauer Cheese
Another popular cheese appetizer back in the 60s, but it keeps reinventing itself...just as good today!
ingredients
- 2 stick butter
- 1 cup creamed style cottage cheese
- 1 Tblspn. whole caraway seeds
- 1 Tblspn. drained, chopped capers
- 1 Tblspn. minced chives
- 1 Tblspn. dry mustard
- 1 Tblspn. chopped anchovy fillets
- 1 Tblspn. paprika
- 1/2 cup chopped radishes
- pumpernickel or rye cocktail bread slices.

Bring all ingredients to room temperature.

Line a 2 cup bowl with plastic wrap.

Blend all ingredients but the radishes, by hand. Set the radishes aside. When the cheeses, chives, spices and anchovies are well blended, spoon into the lined bowl, packing down firmly. Refrigerate.

When ready to serve, turn the cheese mixture out onto a serving plate. Peel off the plastic wrap. Garnish with chopped radishes.

Serve with assorted cocktail breads.
