Chicken, Green Beans, and Potatoes

MelanieMelanie

This meal was a very quick and easy thing to put together, not to mention it only dirtied one dish! I would mix it up with different seasoning packets depending on my mood, but the Italian seasoning did add good flavor. Instead of the butter, we might try a marinade over the chicken next time.

Does anyone know if you need to drain the juice off the green beans in the can?

  • Wendy by ,

I made this this weekend. I substituted broccoli for the green beans. I found the chicken needed about 15 minutes more. But the potatoes hardly baked at all. So I took them out and bake them separate in some of the dressing, then put them back in and did for 15 minutes more to finish the chicken. It was OK. Potatoes were quartered and they were not large potatoes, I don't know why they didn't soften. But once finished, it tasted fine.

I have made this recipe a couple of times and it is delicious. It makes a good dish to take to potlucks. Michelle, in regards to your chicken being raw after the 1 hour cooking time, you might want to cut the breasts up into smaller chunks.

Yum! I'm making it with potatoes, onions, bell peppers and zucchini. I also just used butter flavored cooking spray instead of butter/oil and about 1/2 a packet. So versatile a concept!
