No-Bake Baileys Chocolate Cheesecake
ingredients
- 1 envelope Knox gelatin
- 1/4 cup hot water
- 16 oz. cream cheese (2-8oz. blocks)
- 2/3 cup Baileys Irish Cream
- 2/3 cup sugar
- 1 cup chocolate chips, melted
- 1 small tub Cool Whip
- Graham cracker crust

Sprinkle gelatin over hot water.

Beat cream cheese, Baileys and sugar until smooth.

Stir in gelatin.

Stir in Cool Whip.

Spread into crust and chill for 3 hours or until set.

This recipe is enough to fill a jelly roll pan and then it can be cut into squares.

To make enough crust for the jelly roll pan use 3+ cups graham cracker crumbs, about 1/4 cup sugar, a little cocoa powder and 2 cubes of butter melted. Stir together until mixed well and crumbs stick together

. One envelope of Knox is just under 1 Tbls. . Any kind of cream cheese works well, regular, low fat or non-fat . Any type of chocolate chips will work.
