Potato Salad
Fourth of July Favorite
ingredients
- 8 medium red potatoes(peeled and cooked till tender)
- 1/4 cup onion, chopped
- 3 stalks of celery, chopped
- 6 hard boiled eggs
- Dressing:
- 1/2 cup sugar
- 1 teaspoon mustard
- 2 tablespoons flour
- 1 teaspoon salt
- dash of pepper
- 1/4 cup vinegar
- 1 cup water (1/2 water 1/2 cream)
- 1 egg (raw)
- 3 tablespoons butter
- 1 cup mayonnaise

To make dressing, in a mixing bowl beat together vinegar, water (and cream) and raw egg. Add sugar, mustard, flour, salt and pepper. Microwave until thick 1 minute at a time, stirring each time. Add butter and mayonnaise. Cool.

Fold dressing into potatoes that have been diced. Add onions, celery and hard boiled eggs that have been sliced. Save 1 egg for the top to garnish with.
