Not only does this recipe taste good, but it makes you feel good when you eat it. Easy to make, this recipe makes a huge impression on guests.

ingredients

Soup:
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small red onion, diced
  • 2 garlic cloves, minced
  • 1 head celeriac, peeled and chopped
  • 1 large sweet potato (preferably white, but orange works too)
  • 1 large pink lady apple, peeled, cored, and diced
  • 2 cups water
  • 2 cups veggie broth, preferably homemade
  • 1 bay leaf
  • 1 tbsp marjoram leaves (substitute based on what you have)
  • salt and pepper
  • 2/3 cup heavy cream
  • chopped flat-leaf parsley, to serve
  • chopped ricotta salata or blue cheese, to serve
Parsley oil:
  • 1 cup flat-leaf parsley leaves, packed
  • 2/3 cup olive oil
  • sea salt
