The Traveling Apron -Salmon Salad Niçoise
The Traveling Aprons is the name of a caterer in Weston. They did a demo of the three recipes I have included in this book. Their recipes will begin entitled as “The Traveling Apron”. You will have yourself a fresh and healthy meal which is easy to prepare.
ingredients
- Salad greens
- Haricots Verts (See Vegetable section)
- Grilled salmon (See Fish section)
- boiled red potatoes
- capers
- Soy-Mustard Vinaigrette:
- 1/3 cup cider vinegar
- 1 1/2 tablespoons soy sauce
- 1 teaspoon minced garlic
- 2 teaspoons dry mustard
- 1 teaspoon Dijon mustard
- 3/4 teaspoon salt
- 1 teaspoon pepper
- 1 cup oil
directions
To prepare the vinaigrette, combine all ingredients but oil. After blending drizzle in oil while whisking.
Now to plate the salad. Toss the greens with a small amount of the vinaigrette. Put a bed of greens on a plate. Top with the salmon. Arrange the haricots verts to the side. Add sliced red potatoes to the other side of the plate; sprinkle with capers. Drizzle a little extra dressing on top of the salad.
