Cousin Ronne Batt contributed this dish to a holiday dinner when Alyson was visiting Richmond. Alyson asked Ronne to send it to me so that I too can make the dish, because Alyson loved it. Ronne did and now we all love it!

ingredients

  • 30 oz. frozen spinach, cooked and drained
  • 10 oz softened cream cheese
  • 1 tablespoon butter
  • 1/2 cup sauteed chopped onions
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 15 oz cans artichoke hearts, cut into quarters
  • 1 cup shredded Swiss cheese
  • grated Parmesan cheese

    Combine spinach, cream cheese, butter, onions, salt pepper

  • 2

    Place in a 6“ x 10” casserole in alternating layers with artichokes beginning and ending with the spinach. Top with the cheeses.

    Bake at 350°F. for 30 minutes or until bubbly.
