Penne pasta with asparagus and shrimp
My mom would say “We’re eating in high style” when she tries this. It is very good for everyone who likes to experiment. It is vegetarian dish. No meat. That’s what I like most of the time. It’s good for you.
ingredients
- Asparagus- one bunch 1/4 pieces
- Shrimp- about one pound- each cut in half
- Ziti- or penne pasta- 14 oz.
- 1/2 cup olive oil
- 4 cloves garlic
- 2 tomatoes- diced
- 1 cup white wine
- salt and pepper to taste
directions

1/2 of the olive oil in the pan. Throw in the garlic and saute.

Add Asparagus-cook for a few minutes.

Add the tomatoes.

As the pasta is cooking use up the rest of the olive oil in another skillet and saute shrimp- Add wine and simmer. Add all together.
