6 boneless skinless chicken breasts
½ cup butter
2 cloves garlic
¾ cup progresso crumbs
½ cup parmesan cheese
salt (to taste)
pepper (to taste)
Melt butter and garlic in a glass bowl. Combine crumbs, parmesan cheese, salt and pepper in a ziploc bag. Dip each chicken breast in butter mixture. Then, one by one, place chicken in the ziploc bag and shake to coat with crumb mixture.
Place all chicken in a 9 X 13 pan. Roll up short end of check breast and secure with a toothpick, seam-side down. Drizzle with lemon juice and any remaining crumbs.
Bake at 350° for 1 hour.
