Imperial Chicken

  • 6 boneless skinless chicken breasts

  • ½ cup butter

  • 2 cloves garlic

  • ¾ cup progresso crumbs

  • ½ cup parmesan cheese

  • salt (to taste)

  • pepper (to taste)

  • Melt butter and garlic in a glass bowl. Combine crumbs, parmesan cheese, salt and pepper in a ziploc bag. Dip each chicken breast in butter mixture. Then, one by one, place chicken in the ziploc bag and shake to coat with crumb mixture.

  • Place all chicken in a 9 X 13 pan. Roll up short end of check breast and secure with a toothpick, seam-side down. Drizzle with lemon juice and any remaining crumbs.

  • Bake at 350° for 1 hour.
