John’s Turkey Noodle Casserole

- 1 lb extra wide egg noodles
- 5 cups of cooked turkey cut into 3/4 in. dice
- 4 slices bacon, chopped
- 1 medium onion, chopped
- 2 TB extra-virgin olive oil
- 1 red bell pepper, chopped
- 8 TB unsalted butter
- 8 oz. small frozen peas
- 12 oz. white mushrooms,sliced
- 1 TB poultry seasoning
- 4 TB Madeira
- 1/2 tsp freshly grated nutmeg
- 5 TB flour
- Salt and freshly ground black pepper to taste
- 2 cups of low salt chicken broth
- 3 cups grated Gruyere cheese
- 3/4 cup of heavy cream
- 1 cup grated Parmesan cheese
- 1 to 2 TB of tomato paste (optional)
- 2 cups panko bread crumbs
- 1/4 to 1/2 tsp of hot sauce (optional)
- 6 TB chopped flat leaf parsley
