Fettucini Alfredo with Chicken (Low Fat)
Although this recipe is low in fat, it still turns out thick and creamy.
ingredients
- 8 ounces dry fettucini noodles
- 2 1/2 to 3 tbsp. butter
- 2 1/2 to 3 tbsp. flour
- 2 cups 1 % milk
- 1 tsp. minced garlic (feel free to add more if you like it garlicky)
- 1/2 cup Parmesan cheese
- nutmeg, to taste
- salt and pepper
- 1 grilled chicken breast, salted and peppered

Begin cooking pasta, al dente.

Melt half of the butter, and briefly saute garlic, until fragrant. Add the rest of the butter and when melted, add the flour in increments and whisk rapidly to create the roux. Allow this to cook for about 5 min., and begin adding the milk slowly, while whisking rapidly.

Season the sauce with salt and lots of pepper. As is comes to a boil, the sauce will thicken. Stir in the cheese and add a dash or two of nutmeg.

Add the drained pasta to the sauce, and mix well.

Cut up the chicken breast into strips and mix this in with the pasta.

Don't make the mistake of adding the chicken to the sauce first, it will soak up the sauce leaving the noodles bland! Always add the warm chicken last, just before serving.
