Chicken & Noodle Soup

From: Mom This is the first time I’ve tried to turn my “scoop and dump” method into a recipe.

  • Noodles:

  • approx. 2 cups of flour

  • 3-4 eggs

  • 3 Tbsp water

  • dash of salt

  • Soup:

  • 1 whole chicken

  • 1 onion - chopped or sliced

  • 1 Tbsp parsley flakes

  • small amount of catsup (2 Tbsp?)

  • 1 can cream of chicken soup

  • Making Noodles:

  • Beat the wet ingredients together, then add the flour a little at a time until it form a dough.

  • Roll out flat (⅛“-¼”) onto a floured board, cut into noodles, and then set aside until stock is boiling.

  • Stock:

  • Boil chicken & onion until meat falls off bones.

  • Remove chicken from stock.

  • Remove skin, fat, and bones.

  • Shred or chop meat, and return it to stock.

  • Bring meat & stock to a boil and add homemade noodles, cream of chicken, and catsup (and any additional flavorings you want). Cook until noodles are done (a few minutes).
