Blueberry & Cream Cheese Muffins

As submitted by Heather Russell for Epicurious.com’s Favorite Mother’s Day Recipe Contest.
My family loves these muffins for holidays or even weekend mornings. They are great with coffee.

  • 2¼ cups flour

  • 1 cup sugar

  • 1½ tablespoon baking powder

  • ½ tablespoon soda

  • 6 tablespoon butter, cut up

  • 1½ cup fresh or frozen blueberries

  • ¾ cup plus 2 tablespoons buttermilk

  • 1 egg

  • 13 ounces cream cheese cut into 12 cubes

  • Pre-heat oven to 400°F.

  • Sift or stir together 2 cups flour, ¾ cup sugar, baking soda and baking powder. Cut in butter with pastry cutter, fold in berries and set aside. Whisk together egg and milk and add to dry mixture. Put in muffin cups or greased muffin tin. Roll cheese cubes in remaining sugar and press into top of each muffin. Sprinkle each muffin lightly with sugar and bake for 25 to 30 minutes.
