Memories of Maui Stuffed French Toast

This is a breakfast treat of pure decadence for Mother’s Day and I’m sure dads would like it on their day of honor too!
Makes 4 servings.

ingredients

  • 1 one-pound loaf brioche bread, unsliced
  • 6 ounces mascarpone cheese, room temperature
  • 1 cup pineapple preserves
  • 1 cup milk
  • 3 large eggs
  • 1/4 teaspoon ground ginger
  • 3 to 4 tablespoons unsalted butter
  • 1 cup diced peeled mango
  • 1 1/2 cups maple syrup, warmed
  • 1/2 cup toasted flaked sweetened coconut
  • 1/3 cup toasted chopped macadamia nuts
  • Powdered sugar for dusting
