Memories of Maui Stuffed French Toast

This is a breakfast treat of pure decadence for Mother’s Day and I’m sure dads would like it on their day of honor too!
Makes 4 servings.
ingredients
- 1 one-pound loaf brioche bread, unsliced
- 6 ounces mascarpone cheese, room temperature
- 1 cup pineapple preserves
- 1 cup milk
- 3 large eggs
- 1/4 teaspoon ground ginger
- 3 to 4 tablespoons unsalted butter
- 1 cup diced peeled mango
- 1 1/2 cups maple syrup, warmed
- 1/2 cup toasted flaked sweetened coconut
- 1/3 cup toasted chopped macadamia nuts
- Powdered sugar for dusting
