French Toast Souffle

This recipe is so simple, yet with the most delicious results. It is the perfect Mother’s Day breakfast, I have even helped little children make it. It tastes wonderful, with little work and clean up, especially if you bake it in a disposable pan. A great variation is to stir in a small jar of orange marmalade with the cream cheese and butter mixture.

  • 16 croissants, torn into chunks

  • 2 8-ounce packages of cream cheese, softened

  • 1 cup (2 sticks) sweet cream butter, melted

  • 1 dozen eggs

  • 4 cups half and half

  • 1 teaspoon vanilla

  • Put croissant chunks into a large greased baking dish.

  • Whisk together softened cream cheese and melted butter. Pour mixture over croissants and toss until well distributed,

  • Slightly beat eggs and whisk together with vanilla and half and half. Pour mixture over croissants.

  • Cover and refrigerate overnight. Preheat oven to 350°F, and bake approximately 1 hour, until puffy and golden brown.

  • Serve with your favorite French toast toppings, lots of fresh fruit and sausage or bacon.
