I love for my family to treat me to these on Mother’s Day morning. It just starts my day off great and makes me feel warm and loved. I’m partial to strawberry syrup and whipped cream as my topping, but any toppings can be used.
3 cups flour
½ cup corn meal
¾ tsp salt
2½ teaspoons baking powder
1 beaten egg
1 cup milk
3 tablespoons melted butter
¼ cup maple syrup
Sift dry ingredients together.
Mix liquid ingredients together. Stir liquids into dry ingredients just until dry is moistened.
Bake on lightly greased griddle. You may have to add more milk as it thickens on standing. More corn meal may be added if desired.
