Cheddar Jalapeño Bread

Yields 3 loaves
A rich and spicy bread perfect for any soups or pastas. This bread has a wonderful flavor and is best served warm or toasted.
ingredients
- 2 cups WARM water
- 3 (.25 ounce) packages active dry yeast OR 2 tablespoons and 3/4 teaspoon yeast
- 1/2 cup white sugar, divided (I use evaporated cane juice or demerara)
- 8 cups all-purpose flour (You can use all white or half freshly ground wheat and half all-purpose white.)
- 3/4 cup minced jalapeño peppers (From a jar like Mt. Olive)
- 1 1/2 teaspoons salt
- 4 tablespoons vegetable oil
- 24 oz. block cheddar cheese

Do not use hot water or cold water. It must be warm water for the yeast to rise. I always substitute evaporated cane juice or demerara for white sugar in equal measurements.
