Ingredients

  • Large raw shrimp with tails (4-6 per person)1-2 lbs.
  • Salsa:
  • 1 Cup Chopped fresh pineapple
  • 1 Cup Chopped mango {I used canned}
  • 1 Cup Chopped red pepper
  • 1/2 cup finely chopped red onion or sweet
  • 1/4 cup fresh cilantro
  • 1 tsp lime juice
  • Combine ingredients and refrigerate until ready to use

Place shrimp in a large plastic bag or container. Drizzle with about 1T or so of olive oil. Sprinkle with 2 to 3 tsp jerk seasonings more or less to taste. Skewer and grill. Serve with salsa.
