Yellow Squash Kugel
I got this recipe from your paternal Great Aunt Honey Shapiro. She was a good cook. This is a tried and true recipe from her collection, given to me in the 1970s.
ingredients
- 3 cups shredded squash, grated
- 1 medium onion, grated
- 4 eggs, beaten
- salt and pepper
- 1 tablespoon parsley, minced
- 1/2 cup Parmesan cheese
- 1/2 cup oil
- 1 cup Bisquick
directions

Mix all ingredients together in a large bowl.

Grease a 9“ x 13” dish with margarine. Pour batter in dish.

Bake at 350°F. for one hour.

Serve hot or at room temperature
