The best gazpacho! The sherry vinegar makes all the difference.

ingredients

  • 4 pounds plum tomatoes, halved
  • 5 large red bell peppers
  • 4 med. sized red onions
  • 1/2 c. extra virgin olive oil
  • 3 c. water
  • 3 T. Sherry wine vinegar or to taste
  • 1 t. hot pepper sauce or to taste
  • 1 cucumber, seeded and minced for garnish
