Roasted Tomato and Red Pepper Gazpacho

The best gazpacho! The sherry vinegar makes all the difference.
ingredients
- 4 pounds plum tomatoes, halved
- 5 large red bell peppers
- 4 med. sized red onions
- 1/2 c. extra virgin olive oil
- 3 c. water
- 3 T. Sherry wine vinegar or to taste
- 1 t. hot pepper sauce or to taste
- 1 cucumber, seeded and minced for garnish
