Grandma's Three Bean Salad
Dad’s mom, Gladys Smeyne, Grandma was a really good cook. She liked to cook, yet I was ruthless about her cooking. It seemed that nothing was ever JUST prepared. It was always from the freezer. So, I used to say that whenever we came to town we were getting leftovers. But she did throw it together nicely. She made this salad from scratch. It’s easy and she did a great job with it. I must admit, I added a few things of my own to the mix. You can too!
ingredients
- 1/2 c (or to taste) salad oil
- 1/2 c (or to taste) wine vinegar
- 1/2 c (or to taste) tarragon vinegar
- 1/4 c (or to taste) cider vinegar
- 1/2 c sugar
- 1/2 c liquid from beans
- 1/4 t black pepper or ground peppercorns to taste
- 1/2 c chopped onion or small onion sliced into rings
- 1/2 c chopped green bell pepper
- 1-3oz can green beans, drain and save
- 1-3oz can wax beans, drain and save
- 1-3oz can red kidney beans, drain and save
- 1-3oz can white kernel corn (optional)
- 1-3oz can chick peas (optional)
- 1 small can of sliced mushrooms (optional)
- 1 teaspoon salt if desired
directions
Mix it all together. Let it meld in the fridge for a few hours. Serve.
