Allemande Noodles
The French term allemande refers to food prepared by German techniques. No matter the country, however, the chefs who prepare this say the allemande enhances any meal. 3 is the number of congruity.
ingredients
- 3 cups of diced chicken
- 2 Tbsp oil
- 1 cup chicken broth
- 1/4 Tsp nutmeg
- 3 egg yolks
- 1/3 cup cream
- 1 Tbsp melted butter
- 1 Tbsp flour
- 12 oz. cooked spinach noodles

Brown the chicken in the oil. Mix in the broth and nutmeg. Let simmer for 30 minutes.

Beat the egg yolks and cream in a small bowl. Slowly stir into the chicken mixture.

Mix the butter and flour in a small bowl until smooth. Add a little of this mixture at a time to the chicken; stir constantly. Simmer until sauce is thick.

Remove from heat and pour over noodles.

CAUTION: Do not let the yolks in the sauce cook too long or the sauce will become lumpy.
