Mediterranean Lentil Soup

Warm and simple, with satisfying rich flavors!
ingredients
- 1 large onion, finely diced
- 3 tablespoons olive oil
- 8 cloves garlic, minced, about 4 teaspoons
- 1 pound dry USA lentils, rinsed (about 2 1/2 cups)
- 4 teaspoons chili powder
- 3 teaspoons ground cumin
- 3 teaspoons ground coriander
- 8 cups water or broth
- 1/2 teaspoon ground cinnamon
- Juice of 1 1/2 lemons (about 5 tablespoons)
- 2 teaspoons salt
- 2 tablespoons organic chicken base
- (I like to play with this recipe, I usually add more garlic, cumin, and sometimes garam masala to taste.)
- Plain yogurt and chopped cilantro for garnish

Interesting facts: Lentils are rich source of magnesium. GARAM MASALA, a mixture of spices that are first roasted, then ground, is a specialty of northern India. Traditional formulations contain cardamom, cinnamon, cloves, coriander, cumin, and pepper.
