Warm and simple, with satisfying rich flavors!

ingredients

  • 1 large onion, finely diced
  • 3 tablespoons olive oil
  • 8 cloves garlic, minced, about 4 teaspoons
  • 1 pound dry USA lentils, rinsed (about 2 1/2 cups)
  • 4 teaspoons chili powder
  • 3 teaspoons ground cumin
  • 3 teaspoons ground coriander
  • 8 cups water or broth
  • 1/2 teaspoon ground cinnamon
  • Juice of 1 1/2 lemons (about 5 tablespoons)
  • 2 teaspoons salt
  • 2 tablespoons organic chicken base
  • (I like to play with this recipe, I usually add more garlic, cumin, and sometimes garam masala to taste.)
  • Plain yogurt and chopped cilantro for garnish

Interesting facts: Lentils are rich source of magnesium. GARAM MASALA, a mixture of spices that are first roasted, then ground, is a specialty of northern India. Traditional formulations contain cardamom, cinnamon, cloves, coriander, cumin, and pepper.
