Chocolate Eclairs
Just like a trip to France!
ingredients
- Eclair Dough:
- 1/2 Cup Butter
- 1 Cup Flour
- 1 Cup Boiling Water
- 4 Eggs
- Chocolate Ganache:
- 3 Tbsp. Butter
- 3 Tbsp. Rogers Syrup
- 1 Tbsp. Water
- 1 Cup Semi-Sweet Chocolate Chips

Eclairs:

Place butter & water in saucepan, boil.
- 3
Add flour all at once, beat vigorously.

Remove from heat, add eggs one at at time beating after eat addition.

Place batter in pastry bag w/ lrg. plain tip.

Pipe dough onto a parchment lined pan.

Bake at 400°F for 15 minutes, then reduce to 325°F for 20-30 minutes.

Remove from oven, cool, slice, place in oven to dry for 3 minutes.

Cool, fill with whipped cream, top with chocolate ganache- cool & serve!

Ganache:

Place butter, water& syrup in sauce pan and simmer.

Remove, stir in chocolate- cool until thick.

Spread onto eclairs.
