Chocolate Eclairs

Just like a trip to France!

  • Eclair Dough:

  • ½ Cup Butter

  • 1 Cup Flour

  • 1 Cup Boiling Water

  • 4 Eggs

  • Chocolate Ganache:

  • 3 Tbsp. Butter

  • 3 Tbsp. Rogers Syrup

  • 1 Tbsp. Water

  • 1 Cup Semi-Sweet Chocolate Chips

  • Eclairs:

  • Place butter & water in saucepan, boil.

  • Add flour all at once, beat vigorously.

  • Remove from heat, add eggs one at at time beating after eat addition.

  • Place batter in pastry bag w/ lrg. plain tip.

  • Pipe dough onto a parchment lined pan.

  • Bake at 400°F for 15 minutes, then reduce to 325°F for 20-30 minutes.

  • Remove from oven, cool, slice, place in oven to dry for 3 minutes.

  • Cool, fill with whipped cream, top with chocolate ganache- cool & serve!

  • Ganache:

  • Place butter, water& syrup in sauce pan and simmer.

  • Remove, stir in chocolate- cool until thick.

  • Spread onto eclairs.
