Sweet Blintz Souffle
I was first introduced to this classic back in the mid-1960s. I would drive to Richmond from Fredericksburg, VA after Dad went to work in the morning. Aunt Rena Batt, Dad’s paternal aunt, gave me cooking lessons on how to make cheese blintzes...the real deal. Then this recipe came out and I thought this was a whole lot easier!
ingredients
- Box of 12 sweet blintzes, fruit or cheese
- 1/4 lb. butter/margarine
- 4 eggs
- 1 1/2 cup sour cream
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 tablespoon frozen orange juice concentrate

Melt butter in rectangular dish. Layer the blintzes in one layer.

Blend rest of the ingredients together until well beaten. Pour over blintzes.

Bake for 45 minutes to 1 hour in a 350°F, or until brown.
