Nutty Rhubarb Muffins
These muffins are amazing, and yet really simple to make. The tartness of the rhubarb goes wonderfully with the sweetness of the muffin and the crunchiness of the pecans. These are sure to become a favorite, and are best eaten the same day they are prepared.
ingredients
Muffins- 1 tablespoon lemon juice or white distilled vinegar
- 1 cup milk
- 2/3 cup oil
- 2 eggs
- 2 teaspoons vanilla
- 4 cups flour
- 1 1/2 cups demerara or brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups diced rhubarb
- 1/2 cup brown sugar
- 1/2 cup pecans
- 1 teaspoon cinnamon
- 2 tablespoons butter, softened
