Coconut Banana Bread with Lime Glaze
Bread:
2 C. Flour
¾ tsp Baking Soda
½ tsp Salt
1 C. Sugar
¼ C Butter (softened)
2 Large Eggs
1½ C. Mashed Ripe Banana (3 bananas)
¼ C. Plain Yogurt
3 Tbsp Apple Juice
½ tsp Vanilla
½ C. Coconut
Glaze:
½ C. Powdered Sugar
1½ Tbsp Fresh Lime Juice

Bread:
Combine flour, baking soda, and salt in a bowl. Cream butter and sugar together. Slowly add eggs one at a time. Add banana, yogurt, apple juice and vanilla. Add flour mixture and coconut.
Spoon mixture into (2) loaf pans and sprinkle with coconut. Bake at 350 for 1 hour. Cool for 10 minutes.
Glaze:
Combine powdered sugar and lime juice with a whisk. Drizzle over warm bread.
