Coconut Banana Bread with Lime Glaze

  • Bread:

  • 2 C. Flour

  • ¾ tsp Baking Soda

  • ½ tsp Salt

  • 1 C. Sugar

  • ¼ C Butter (softened)

  • 2 Large Eggs

  • 1½ C. Mashed Ripe Banana (3 bananas)

  • ¼ C. Plain Yogurt

  • 3 Tbsp Apple Juice

  • ½ tsp Vanilla

  • ½ C. Coconut

  • Glaze:

  • ½ C. Powdered Sugar

  • 1½ Tbsp Fresh Lime Juice

  • Coconut

  • Bread:

  • Combine flour, baking soda, and salt in a bowl. Cream butter and sugar together. Slowly add eggs one at a time. Add banana, yogurt, apple juice and vanilla. Add flour mixture and coconut.

  • Spoon mixture into (2) loaf pans and sprinkle with coconut. Bake at 350 for 1 hour. Cool for 10 minutes.

  • Glaze:

  • Combine powdered sugar and lime juice with a whisk. Drizzle over warm bread.

notes:

I recommend to make smaller loaves with a thicker glaze.
