Double Zucchini Nut Bread

ingredients
- 3 Eggs (beaten)
- 1 1/2 C. Sugar
- 3 tsp Vanilla
- 1 C. Oil
- 2 C. Grated Zucchini
- 3 oz Pkg of Instant Chocolate Pudding Mix
- 1/2 C. Chocolate Chips
- 3 C. Flour
- 1 tsp Salt
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 3 tsp Cinnamon
- 1/2 C. Nuts
- 1/2 C. Coconut

Mix eggs, sugar, vanilla and oil. Add flour, zucchini, salt, soda, baking powder, and cinnamon. Fold in pudding mix, chocolate chips, nuts and coconut.

Divide into (2) loaf pans and bake at 350 for 1 hour.
