Pork Tangiers with Carrot Ginger Sauce
Serve the Pork Tangiers with the Carrot Ginger Sauce which is spread on the platter before placing the pork tenderloins on it.

- 2 pork tenderloins - ready for roasting
- SPICE RUB
- 1 teaspoon Kosher salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cardamon
- 8 - 10 turns fresh ground black pepper
- 2 teaspoons olive oil
- 1/2 cup wine for deglazing pan
- CARROT GINGER SAUCE --
- 1 pound carrots, cut into 1" pieces
- 1/3 cut whipping cream
- 1 tablespoon finely grated fresh ginger
- 3/4 teaspoon salt
