Pork Tangiers with Carrot Ginger Sauce

Serve the Pork Tangiers with the Carrot Ginger Sauce which is spread on the platter before placing the pork tenderloins on it.

ingredients

  • 2 pork tenderloins - ready for roasting
  • SPICE RUB
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cardamon
  • 8 - 10 turns fresh ground black pepper
  • 2 teaspoons olive oil
  • 1/2 cup wine for deglazing pan
  • CARROT GINGER SAUCE --
  • 1 pound carrots, cut into 1" pieces
  • 1/3 cut whipping cream
  • 1 tablespoon finely grated fresh ginger
  • 3/4 teaspoon salt
