Taco Salad

This is so light and refreshing, yet filling at the same time. I always get asked for this recipe from guests.

  • 1 pound hamburger
  • 1 packet or taco seasoning
  • 1 bottle of Catalina WITH Honey
  • 1 bag of tortilla chips
  • 1 8 oz. package shredded cheddar cheese
  • 1 large tomato, diced
  • 1 small onion, diced
  • 1 large yellow OR green bell pepper, diced
  • 1 head of romaine lettuce, chopped
  • 1 15 oz. can dark red kidney beans, rinsed and drained
  • 1 small can black olives, optional

    In a skillet, cook hamburger. Drain and add taco seasoning according to packet directions. Set aside or in the refrigerator to cool.

    In a large bowl, combine tomato, onion, bell pepper, lettuce, kidney beans, and optional olives.

    When meat is cool, add to the salad mixture.

    On individual plates, place a generous amount of the tortilla chips. Sprinkle with cheese, and microwave for 20-30 seconds to melt the cheese.

    Top chips with the salad mixture, and pour the Catalina on top to taste.
